The White Hart Hotel, Braintree
You can't get much more traditional than this - parts of the building date back to the 15th century and with the heavy beams and dark wood it feels like it. Originally part of the guildhall, it became a coaching in about 1526, and the original south road from Braintree ran through the two wings where the entrance hall is now. It's still a central part of the pretty little village of Coggeshall, and when we were there on a Saturday, both of the bars were busy with people eating, chatting or reading the papers. The beer is Greene King, the food is reasonable enough and the staff are accommodating and efficient. If you fancy a night away from London, you could do worse, and the breakfast (including the full English) that's included in the price of the room is substantial and well done. Definitely one to put your list for that Sunday lunch in the country.
